CRMLS Product & Event Supervisor and resident gourmand Ian Huss is serving up his favorite avocado-focused recipes. Here’s a dish to warm you up this winter: Baked Avocados.
Ingredients:Â Â
- 4 large ripe avocadosÂ
- 2 limes juicedÂ
- ½ cup mayonnaiseÂ
- 2 tablespoons chili crispÂ
- 6 strips of bacon, crumbled Â
- 1 cup Colby-Jack cheese Â
- Salt & pepperÂ
Instructions:Â Â
- Preheat oven to 425° F.Â
- Slice the avocados in half, removing the pit. Create a small well by removing a bit of the avocado (think like a baked potato). Drizzle with lime juice and season with sea salt and pepper. Â
- Add the scooped bits of avocado to a bowl and mix in mayo, chili crisp, bacon, and cheese. Spoon the mixture into the hollowed out avocado halves. Â
- Bake for 13-15 minutes or until the filling has browned and the avocados have begun to soften. Â
